in today's episode I san style=”text-decoration: underline;”>an> you a delicious for fluffy Currant Bunsfor that first crumble ½ cube of fresh yeast into a high containerpour in 225 milliliters lukewarm milkalso add 50 grams sugar & 1 sachet of vanilla sugarstir an style=”text-decoration: underline;”>toan>gether with a whisk or fork until sugar & yeast have completely dissolved

then in a mixing bowl combine yeast-milk-mixture with 500 grams flour, 1 egg, 50 grams soft butter1 teaspoon salt & 150 grams currants& knead together with a kitchen machine or mixer with dough hooks for about 4 – 5 minutes until you got a slightly sticky doughnext slightly flour the countertopgive the dough onto the floured surface

& continue kneading with your hands by pulling the dough from the outside inwardsuntil the whole dough is coated with a light flour layer & does not stick to there fingers anymorethen give the dough a ball shape, lay it back an style=”text-decoration: underline;”>toan> the mixing bowl& allow to rest for about 30 – 45 minutes in a warm placeduring the resting period the dough's volume should doubled in size

then get the dough out of the mixing bowlbriefly knead againhere you should not need additional flour for the countertophalve the dough with a knife& cut each half into 5 equal sized pieces

now we can shape our currant bunsfor that simply round the dough pieces with circular movements under your palms& repeat that for the rest of the dough pieces until you shape a total of 10 bunsthen place the buns with some distance to each other on a lined baking trayand allow to rest covered with a kitchen an style=”text-decoration: underline;”>toan>wel for about 30 – 45 minutes

when the buns are risen a bitwhisk up 1 egg in a cup & brush the risen buns all around with the egg mixtureif thats done we can bake the currant buns in a preheated ovenfor about 15 minutes at 200°C (an style=”text-decoration: underline;”>toan>p/botan style=”text-decoration: underline;”>toan>m heat)until golden brown
