The Ultimate Basic Muffin Recipe

Hey guys! It's Sam here from Sugar Spun Run and today, I will be showing you how to make an easy, basic muffin recipe So today's muffin recipe is meant to be a starting point for you

I'm going to show you how to make this easy batter and how to bake it The end result is going to be bakery style, soft, and fluffy muffins You are going to be able to add whatever add-ins you like to this Frozen fruit, fresh fruit, nuts, whatever you like is going to work great in this recipe So to get started, the first the first thing you are going to want to do is preheat your oven to 425 degrees Fahrenheit By the way if you don't bake with Fahrenheit, you use Celsius: If you don't use cups, you use grams, I am going to have all of those conversions just below in the recipe so you can check that out

So once you have preheated your oven, you are going to need a large bowl and we are going to add 4 tablespoons of melted unsalted butter Make sure to get all of that in there Next we will add 1/4 cup of either canola or vegetable oil So we are actually using a blend of oil and butter, rather than just using one or the other, that's because this is going to give your muffins a really rich, buttery taste, but it's also going to give you that moisture that you only really get from using oil

We'll add one cup of granulated sugar and then we will just whisk everything together until it's well combined Now we will add one large room temperature egg And this recipe also uses an additional large, room temperature, egg white This is going to help make these muffins nice and fluffy We will add a teaspoon and a half of pure vanilla extract

and then just stir everything together until it's well combined Now we will stir in a half cup of buttermilk If you don't have buttermilk, I have a really easy buttermilk substitute, I'll leave the instructions for that down below So set those wet ingredients aside, now that you have nicely combined everything, and now you are going to need a separate, medium sized, bowl filled with 1 and 3/4 cup of all purpose flour We'll add two teaspoons of cornstarch, two teaspoons of baking powder, and a half teaspoon of salt Now you will want to stir these together until everything is nicely combined

You want to make sure your baking powder and cornstarch are evenly distributed through your flour So now we are going to bring back our wet ingredients, and we are not going to need the whisk anymore We are going to be stirring everything together very gently now This is where a lot of people go wrong when they bake goods like cakes and muffins You do not want to over-mix this batter, you want to go very carefully when you are stirring

I am going to use a spatula and I'm going to stir everything by hand You definitely would not want to use an electric mixer for this recipe So I am going to pour in the flour mixture, and then just very gently, I'm just going to stir, I'm just going to kind of fold these ingredients together Until they are halfway combined This is about halfway combined at this point, we haven't stirred everything completely together and this is when you want to add your add-ins Now you can add a cup and a half of your favorite add-ins

So this is where you add frozen fruit, or fresh fruit Today, I am going to be adding a mix actually, I'm going to add a cup of chocolate chips and I am going to add a half cup of chopped walnuts The reason we are adding this now instead of when the batter is completely combined is again because you don't want to over do it This keeps us from over-mixing our batter We will continue to just gently stir everything together until the add-ins are well distributed and the batter is well mixed

Now I am going to give you an optional step I don't always do this, but if I have the time I like to At this point, once everything is mixed together, you can cover this batter with a clean towel, and let it sit for 15 minutes to an hour That's going to let your batter rise a little bit It will make your muffin tops higher than they would be otherwise

So if you want to make these and then preheat your oven, and wait for your oven to preheat while it's covered and give that batter a little bit of time to rise That's fine, that's good, it's not going to hurt the batter at all If you don't have the patience for that, we can just go ahead and scoop our batter into the muffin tin This recipe is going to make 12 muffins and you are going to want to line the muffin tin with paper liners If you don't have paper liners, you can either use a baking spray, or lightly grease and flour the sides and bottom of each cavity The easiest way I have found to scoop my muffin batter is to use an ice cream scoop

I have found that a heaping scoop is just about the right size to fill each muffin liner and it really helps if it has one of these (I don't know) release levers on it You want to fill each muffin liner about 3/4 of the way full Here's another optional tip, before I bake my muffins, I like to sprinkle them with a little bit of granulated sugar, I actually have turbinado sugar here today, coarse sugar is my preference, but if you don't have that, regular granulated sugar will work and I just sprinkle a little bit of sugar over each muffin

Now these muffins are ready to bake, and my baking process is one thing that sets my muffins apart from a lot of other muffins We are going to start by putting them in our 425 degree oven and baking them for 8 minutes Then, without opening the oven door, we are going to drop the temperature to 350 degrees Fahrenheit, and we will continue to bake these for another 12 minutes You are just going to bake them until the top is a nice light golden brown If you insert a toothpick into the top, it should come out clean, or preferably with a few moist crumbs

Then you will pull them out of the oven and let them cool You really want to make sure you don't over-bake these, because that's a really good way to get dense dry muffins So make sure you pull them out when they are finished baking Do not let them bake too long The kitchen smells amazing, and these muffins are now ready to eat
